Air Fryer Chicken Schnitzel
Crispy, golden chicken schnitzel made easy in the air fryer. Less oil, but all the crunch you love.

Ingredients
- 4 chicken breast fillets, halved horizontally
- 1/2 cup plain flour
- 2 eggs, lightly beaten
- 1 1/2 cups panko breadcrumbs
- 1/4 cup finely grated parmesan
- Olive oil spray
- Lemon wedges, to serve
Method
Place the flour in a shallow bowl. Place the beaten eggs in a second bowl. Combine the panko breadcrumbs and parmesan in a third bowl.
Coat one piece of chicken in the flour, shaking off any excess. Dip into the egg, then coat thoroughly in the breadcrumb mixture, pressing firmly so it sticks.
Repeat with the remaining chicken pieces.
Preheat your air fryer to 200°C for 3 minutes.
Spray the crumbed chicken generously with olive oil spray on both sides.
Place the chicken in the air fryer basket in a single layer (you may need to cook in batches). Cook for 12-15 minutes, turning halfway, until golden brown and cooked through.
Serve hot with lemon wedges and a side salad.
Recipe Notes
Make sure you spray the chicken well with oil to get a nice golden crumb.
Best eaten fresh, but can be kept in the fridge for up to 2 days and reheated in the air fryer.
