Beef Mince Pasta Bake
A comforting, family-friendly pasta bake loaded with hidden veggies and topped with melted cheese.

Ingredients
- 350g dried penne or macaroni
- 1 tbsp olive oil
- 1 brown onion, finely chopped
- 2 garlic cloves, crushed
- 500g lean beef mince
- 1 carrot, grated
- 1 zucchini, grated
- 700g bottle passata
- 1 cup grated tasty cheese
- 1/2 cup grated mozzarella
Method
Preheat oven to 200°C (180°C fan-forced).
Cook the pasta in a large saucepan of boiling salted water following packet directions. Drain and return to the pan.
Meanwhile, heat oil in a large frying pan over medium-high heat. Add onion and garlic, cooking until softened.
Add the beef mince and cook, breaking it up with a wooden spoon, until browned.
Stir in the grated carrot and zucchini. Cook for 2 minutes until softened.
Pour in the passata. Bring to a simmer and cook for 10 minutes until the sauce thickens slightly. Season to taste.
Stir the meat sauce through the cooked pasta. Transfer to a large baking dish.
Sprinkle over the tasty cheese and mozzarella. Bake for 15-20 minutes until the cheese is melted and golden.
Serve hot with a simple green salad.
Recipe Notes
Can be frozen for up to 3 months. Thaw in the fridge overnight before reheating.
