Slow Cooker Beef Casserole

Ingredients
- 1kg chuck steak, diced into 3cm pieces
- 2 tbsp plain flour
- 2 tbsp olive oil
- 1 brown onion, chopped
- 2 carrots, thickly sliced
- 2 celery sticks, sliced
- 400g tin diced tomatoes
- 1 cup beef stock
- 1 tbsp Worcestershire sauce
- 2 bay leaves
Method

Toss the beef in the flour to coat.

Heat half the oil in a frying pan over high heat. Brown the beef in batches, then transfer to the slow cooker.

Heat the remaining oil in the pan. Cook the onion, carrots, and celery for 5 minutes until softened. Add to the slow cooker.

Pour the diced tomatoes, beef stock, and Worcestershire sauce into the slow cooker. Add the bay leaves and stir well.

Cover and cook on LOW for 8 hours or HIGH for 4 hours, until the beef is very tender.

Remove bay leaves before serving with mashed potato or crusty bread.
