Crispy Skin Salmon
Restaurant-quality crispy skin salmon that you can easily make at home in under 15 minutes.

Ingredients
- 2 x 200g salmon fillets, skin on, pin bones removed
- 1 tbsp olive oil
- Salt and freshly ground black pepper
- Lemon wedges, to serve
Method
Pat the salmon fillets completely dry with paper towel. This is the secret to crispy skin! Season the skin generously with salt.
Heat the olive oil in a non-stick frying pan over medium-high heat.
Place the salmon in the pan, skin-side down. Press down gently with a spatula for the first 10 seconds to stop the fillets from curling.
Cook for 4-5 minutes until the skin is very crisp and the fish is cooked about halfway up the side.
Carefully flip the salmon and cook for a further 2-3 minutes, depending on how you like your salmon cooked.
Serve immediately, skin-side up, with lemon wedges.
